A delicious fruit glaze!

Ingredients:
2 whole chicken breasts, cut in half
Flour
2 tablespoons butter
Raspberry Glaze (recipe follows)

Directions:
Preheat oven to 400 degrees. Dredge chicken breasts lightly with flour, shaking off the excess. Melt butter in a skillet over medium heat. Brown chicken quickly on both sides and place browned breasts in a single layer in a shallow oven proof baking dish. Brush with raspberry glaze and bake for 15 minutes, basting every 5 minutes.

Raspberry Glaze
1/4 cup Clearbrook Farms Oregon Red Raspberry Preserves
1 tablespoon raspberry vinegar
1 tablespoon fresh lemon juice
Grated rind of one lemon

Combine all glaze ingredients in a small saucepan and heat to boiling, stirring to combine.
