A crunchy & healthy salad

Ingredients
3 1/3 cups chopped Sweet Energy Medjool Dates
3 Quarts Carrots, coarsely shredded
3 cups Celery, sliced
3 1/4 cups Mayonnaise
2 Tbsp Reconstituted Lemon Juice

Directions:
1. In large bowl, combine carrots, celery, dates, mayonnaise and lemon juice
2. Cover. Refrigerate for 1 to 1-1/2 hours

Yield: 50 servings: 3 quarts + 1/2 cup
